Want to make your dish stand out at the family potluck this Easter? Then do what I do every year and serve some Easter bunny. Trust me it will be the most talked about dish at any get together. The only way to it is to serve groundhog on Ground Hogs Day (Which I have done). This year it is Rabbit Salad Sandwiches, kind of like Chicken Salad Sandwiches only better. If features a nice herby flavor with fruit and meat which is awesome for an early spring day.
Rabbit Salad Sandwiches

2 cups stock (Chicken, Beef, Venison, Groundhog …Whatever you have.)
¾ cup Mayo
¼ cup chopped rosemary
1 diced apple
½ cup dried cranberries
½ cup toasted walnuts
Start with browning your meat in a hot skillet, place the browned squirrels in a pressure cooker or Dutch oven, and cover with the broth. For Pressure cooker cook on high pressure for 15 min, for Dutch oven simmer on the stove top for up to 2 hours or whenever the Rabbit is tender. Remove the meat from the liquid and set the liquid aside. Let the meat cool. Using your hands pull the meat from the bone.
Mix rabbit, rosemary, mayo, apples, cranberries, and walnuts together in bowl. Serve on delicious bread.
